The integrated AISI 316L stainless steel boiler generates accurate and stable steam, while the Lambda Sensor continuously monitors humidity and automatically adjusts settings based on load size and product type. Cooking modes include dry convection from 25°C to 300°C, combination cooking, low temperature steam from 25°C to 99°C, steam at 100°C, and high temperature steam up to 130°C. EcoDelta cooking with core probe maintains a constant temperature difference between the food core and the cooking chamber, ensuring precision and repeatability for large batch operations.

Designed for durability and hygiene, the oven features a seamless rounded chamber in 304 AISI stainless steel, a triple thermo-glazed door with hinged inner panels, and double LED lighting for clear product visibility. The OptiFlow air distribution system combined with a 5-speed reversing fan ensures even heat circulation throughout the cavity. SkyClean automatic cleaning with integrated boiler descale, USB connectivity, and HACCP compatibility support efficient and compliant kitchen management.
