More Than Setting Humidity
A combi oven can be programmed to cook at a particular temperature and humidity level, but the programmed setting is only the starting point. Once food is loaded into the chamber, the conditions inside the oven begin to change.
Food releases moisture as it cooks, and the amount of moisture introduced into the chamber can vary depending on the type, quantity and size of the load. A lightly loaded oven and a fully loaded oven can therefore create different cooking environments.
Lambda Sensor is designed to account for those changes.
Rather than relying solely on the humidity level selected in a cooking program, the system measures the actual humidity inside the cooking chamber in real time. Lambda Sensor measures humidity every second, providing 60 measurements per minute or 3,600 measurements every hour.
This continuous measurement gives the oven information about what is actually happening inside the chamber, rather than relying solely on what has been programmed.
Measurement Creates Control
The principle behind Lambda Sensor is straightforward: measure, respond and measure again.
The built-in steam generator provides the steam needed to create a humidity-controlled cooking environment, while the Lambda Sensor continuously measures the humidity inside the chamber. This gives the oven real-time information about the cooking environment as the process progresses.
Real humidity control with an accuracy of ±1% is specified for PremiumS combi ovens. This control works alongside automatic recognition of the quantity and size of food to help guarantee consistent cooking results.
This is particularly relevant in a professional kitchen, where every cook is not necessarily identical. The quantity of food, size of the load and characteristics of the product can all influence the environment inside the oven.
By continuously measuring humidity, Lambda Sensor helps the oven respond to those changing conditions and supports more consistent cooking results.

OptiFlow is designed to manage airflow and heat distribution throughout the cooking chamber, while the six-point multiprobe provides precise measurement of food core temperature. Together with humidity control, these technologies give the oven more information about the conditions affecting the cooking process.
Other technologies address different stages of cooking. T-Xcelerator is designed for rapid preheating, while Dry-Xcelerator helps remove humid air from the chamber when a drier cooking environment is required. The Dry-Xcelerator venting system can exhaust up to 90 m³ of air per hour.
Each technology has a specific purpose, but they work towards the same objective: giving the oven greater control over the conditions in which food is cooked.
